Green Omelette

• 4 eggs

• 1/4 cup almond milk

• A knob of butter

• Handful of spinach, chopped roughly

• 1/2 apple, sliced thinly

• Salt and pepper

• Parsley to garnish


Crack eggs into a bowl and whisk them together with along milk. Throw the butter into a small frypan over medium heat andpour in egg mixture. Give it 2-3 minutes before sprinkling spinach over the top and then placing avocado and apple alternately around as pictured. 

Allow the egg to cook through and try to get out and onto a plate in one piece. 

op with fresh parsley, salt and cracked pepper to serve. Serves 2.
